- 4 chicken thighs
- 2 tablespoons za’atar spice
- 1 can chickpeas, drained and rinsed
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- 1 lemon, juiced
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix olive oil, za’atar, salt, and pepper.
- Coat chicken thighs in the mixture.
- Place the chicken on a baking sheet.
- Add chickpeas around the chicken.
- Drizzle lemon juice over the chicken and chickpeas.
- Roast in the oven for 35-40 minutes until chicken is cooked through.
- Garnish with fresh parsley before serving.
